IC Roasted Pear Salad

Time for some fresh fall pears. Try this IC friendly autumn salad and you may never miss the irritating salad dressings again!

ROASTED PEAR SALAD

3 firm pears
8 ounces of favorite lettuce greens (arugula works well and is tolerated by most)
1/3 cup brown sugar
1/4 cup chopped almonds or cashews
1/4 cup raisins or cherries (if tolerated) or dried blueberries or dates
4 ounces Feta cheese
1 cup pear nectar or puree (or peach, or mango juice or puree if tolerated)

Preheat oven to 375 degrees.
Slice pears in half lengthwise. Remove cores to create holes for filling.
Bake pears upside down in a greased baking dish for 30 minutes.
Arrange lettuce on 6 salad plates.
Place cooled pears hole side up on lettuce.
Mix remainder of ingredients together & spoon evenly atop pears.

There are many different varieties of pears available most of the year.
Try red, bosc, bartlett, Anjou or Asian pears for a new twist. All are IC friendly.
