Harvest Raisin Apple Cakes

This tasty autumn treat can be made into separate cakes in custard cups, a giant muffin tin or baked in a cake pan. What would you prefer?? 


  • 1/4 cup butter or margarine, softened 
  • 3/4 cup sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla
  • 1 cup flour
  • 1 teaspoon baking soda
  • 1 1/2 cups raisins
  • 1 1/2 cups grated Fuji, Gala, or Pink Lady apples


  1. In a large bowl, combine butter, sugar cinnamon & vanilla.  Beat to blend thoroughly.  
  2. Add flour & soda; mix to blend. 
  3. Mix in raisins & apples.  Mixture will be dry. 
  4. Spoon, equally into divided, into 8 greased 6-ounce custard cups.  Place on baking sheet. 
  5. Or place all the dough into a greased 8-inch square baking dish. 
  6. Bake in 350 degree oven 40-45 minutes until springy to the touch.  Bake longer if making one cake. 
  7. Cool & serve with whipped topping or vanilla ice cream.  Garnish with any kind of chopped nuts.
